A $120billion Market: where is coffee going Globally?

The global context: a market undergoing transformation

In recent years, the coffee sector has undergone profound transformations that have redefined its global geography, consumption models, and market segments. According to the “Coffee Global Market Report 2025–2033,” published by Research and Markets, the value of the global coffee market is set to exceed 120 billion USD by 2033, supported by a projected compound annual growth rate (CAGR) between 5% and 6%.

This expansion involves not only the volume of coffee traded globally but, more importantly, the value created through new consumption habits, advanced segmentation, and constant innovation in formats. In other words, coffee is no longer just a commodity: it has become a complex ecosystem with country-specific dynamics.

Asia as the new growth engine in coffee consumption

One of the key growth drivers is the emergence of new Asian markets. In particular, China, India, Indonesia, and Vietnam are experiencing significant increases in domestic consumption. In China alone, coffee consumption grew by 15% year-on-year in 2024, according to data from the International Coffee Organization. This trend is especially noteworthy considering that just a few years ago, the Chinese market was still heavily dominated by tea culture.

The boom in Asia is largely driven by younger urban generations, who are increasingly attracted to customizable products, experiential environments, and high-quality offerings such as specialty coffee. The rise of new local and international chains, capable of combining storytelling, aesthetics, and format innovation, confirms that this trend is becoming a structural shift.

Formats and segments: from classic to cutting-edge

At the same time, we are witnessing a major transformation in coffee formats. Traditional methods like moka, espresso, and drip now coexist with compostable capsules, ready-to-drink (RTD) beverages, premium instant coffees, and functional drinks based on coffee. Among these, the RTD segment is one of the most dynamic, with growth rates above 7% annually, particularly in North American and Asian markets. Instant coffee, often seen as a lower-tier product, is also undergoing a revival, thanks to improved quality standards and transparency in communication.

Arabica vs Robusta: origins, roles and segmentation

The specialty coffee movement continues to play a central role. Initially emerging in mature markets, it is now being adopted in developing regions as well. It has redefined the very concept of quality in coffee. Arabica remains dominant in high-end segments and alternative brewing methods, while Robusta—long confined to industrial blends—is gaining new recognition as a single origin for professional uses and bolder flavor profiles. This represents a true segmentation of coffee origins, based not only on botanical traits but also on usage and consumer expectations.

Value creation and sustainability across the supply chain

Alongside these product and market dynamics, there is growing awareness throughout the supply chain. Environmental sustainability, labor rights, traceability, and eco-friendly packaging have become essential criteria in creating value. More and more consumers are choosing their coffee based on brand ethics and transparent communication.

Why the global coffee market matters to the entire value chain

Understanding the trajectory of the global coffee market is therefore essential for importers, roasters, distributors, and stakeholders across the sector. It means navigating a constantly evolving landscape shaped by cultures of consumption, business models, and innovations that influence one another.

Coffee remains one of the most consumed beverages in the world, but its market has never been so multifaceted. Behind every cup lies a network of strategic decisions, social changes, and new development opportunities. Value is no longer measured only in tonnes but in the ability to evolve with the world.
